The Story of IPPUDO

IPPUDO was founded in 1985 in Japan's ramen capital of Hakata by Shigemi Kawahara, the internationally renowned Ramen King. Since 2008, when IPPUDO opened its first international outlet in New York, it has quickly expanded. There are over 80 stores in Japan, and globally in places such as Singapore, Hong Kong, Taiwan, Seoul, Malaysia, China and Thailand, with plans for further expansion. Everywhere we expand, the mission remains the same: to spread “Smile” and “Arigatou” through bowls of ramen.

Hakata, another name for Fukuoka city in the south of Japan, is best known for its tonkotsu-based ramen, made from pork bones and simmered for many hours. Its creamy texture and white colour exemplifies deep yet light flavours of pork. Ultra-thin noodles were invented to cater to the Hakata crowd, who demands quick service.
